〈NUMAZU COFFEE LAB〉は、静岡県沼津市にある自家焙煎のコーヒーショップである。3階建て鉄骨造ビルの大規模修繕を進めるなかで、まちとの接点となるグランドレベルをどのような場所とするかは、地域にとっても建物の運営にとっても重要なテーマであった。そこで、遊休化ビルの暫定利用で人や活動を集める「For now」プロジェクトにこれまで参加していた、バリスタの齊藤史弥氏に声を掛け、この場所での出店が実現した。
店では、浅煎りを中心とした10-15種類の特殊プロセスの豆を扱い、コーヒーとそれを用いた創作ドリンク、数種類のデザートを提供している。内装は、店名にある「LAB（実験室）」の名のとおり、実験的な要素と落ち着きを併せもつ空間を意図した。厨房側は白で統一し、機能性を重視した清潔な印象に。客席側は木毛セメント板による荒い質感を活かし、温かみのある居心地をつくっている。両者を分けるのはステンレスカウンターであり、素材の対比によって空間の二面性を際立たせている。
角地に建つ建物の特性を活かし、エントランスは多方向からの視線に応答する多角形の構成とした。焙煎機を外からも見える位置に設けることで、街路に向けて開かれたコーヒーラボとしての姿をかたちづくっている。

“NUMAZU COFFEE LAB” is a coffee shop in Numazu City, Shizuoka Prefecture, that roasts its own beans. As major renovations were underway on the three-story steel-frame building, determining what kind of space to create at ground level—the point of connection with the community—was a crucial issue for both the local community and the building’s management. Consequently, they reached out to barista Fumiya Saito, who had previously participated in the “For now” project—which brings people and activities together through the temporary use of underutilized buildings—and this led to the shop opening at this location.
The shop offers 10 to 15 varieties of specialty-processed beans, primarily light roasts, along with coffee, creative coffee-based drinks, and several types of desserts. True to the “LAB” in the shop’s name, the interior design aims to create a space that combines experimental elements with a sense of calm. The kitchen area is unified in white, creating a clean impression that prioritizes functionality. The customer seating area uses the rough texture of wood-fiber cement panels to create a warm, cozy atmosphere. A stainless steel counter separates the two areas, highlighting the space’s duality through material contrast.
Taking advantage of the building’s corner location, the entrance features a polygonal layout that responds to views from multiple directions. By positioning the roaster where it is visible from the outside, the space embodies the image of a coffee lab open to the street.
