歴史の風情を残す名古屋の商人街、四間道にある「喫茶ニューポピー」のバックヤード不足を解消するための、作業場が、隣接するこの場所には求められていた。そこで、これまで見せていなかった仕込みや焙煎を風景として開き、作業と物販を両立する焙煎所兼ショップ空間を計画した。焙煎機の音、立ち上る香り、素材の手触り、そして時間の流れそのものを感じさせることで、この場所の価値をつくり出そうとした。
かつて、喫茶店文化が広がった高度経済成長期、焙煎豆の流通を担った商会のように、多数の地域の飲食店へ豆卸しする拠点でもある。どこでも買える時代だからこそ、珈琲を再び「体験」として取り戻す焙煎所である。
水路が誘う石盤の路地、小さな中庭に据えられた水盤、その滞留の先の扉をあける。靴を脱いで上がる群青のウィルトンカーペットの感触、これは心理的・感覚的な切り替えを促している。小さな店内は、購買体験・商品 展示、焙煎・仕込みの各エリアにゾーニングし明確に区分している。中央のステンレスの展示台は、圧迫感と見通しの観点から高さが低い。ゲストは回遊しながら腰を下ろさなければならないが、これが余白と秩序を生む。視覚的な冷たさと緊張感も与えている。
もっとも自然の光が入る格子窓の前では、移設した国産焙煎機が毎朝、大きな音とともに湯気と香りを立てる。仕込みスペースを隠すためのカウンターの仕上げには、炭化コルクを採用した。本来は下地材であり、大量の煤や微細な粉が出るため、試行錯誤を経て特殊なオイルを浸透させて止めたことで深みのある濡れ色になった。壁や天井の塗料には、光や香りを吸収する備長炭を混ぜたものを使った。特注した鉄のフレームの大きな小判型の吊り鏡は実用と象徴を兼ねている。
伝統的意匠で建てられた木造建築のため、高さ2.17mしか確保できない天井は、1mmのアルミ鏡面板で仕上げた。空間を視覚的に広げるだけでなく、時間そのものを可視化する装置として、水面が鏡のように景色を映し出 す現象から着想した。背景に溶け込むグレーミラーは、店内の人や時間を横長窓のように景色として見せる。
敷居の高さから始まる購買体験、火の気配を伝える素材に演出される焙煎という行為、ガラスと金属が映し出す人と時間の移ろいと景色。トレンドや流行に流されるのではなく、香り・質感・温度によって形づくられる地に足のついたデザインは、既存の設え、差し込む光、喫茶店、街との関係など「既にそこにあるもの」を引き出したものである。
身体感覚を通して、喫茶店の日々の営みを感じ、焙煎という行為の時間を体験すること。珈琲や焙煎豆を買うた めだけではなく、その背景にある時間や営みに触れるための場所として計画した。名古屋に根付く喫茶文化と、かつての商いの記憶を継承しながら、変化していく 「今」を反芻する。

A coffee roastery that reflects people and time
Located in Shikemichi, Nagoya’s historic merchant district, POPPY Roastery was conceived as a response to the lack of back-of-house space for Kissaten New Poppy. The adjacent site became a place where preparation work and coffee roasting—previously hidden from view—could be opened up as part of the landscape. The project combines production and retail within a single environment, creating value through the sound of the roasting machine, the aroma rising through the space, the tactile qualities of materials, and the sensation of time itself unfolding.
Like the coffee trading companies that supported the spread of kissaten culture during Japan’s postwar economic growth, the roastery also functions as a hub supplying beans to cafés and restaurants throughout the region. In an age when coffee can be purchased anywhere, the project seeks to restore coffee as an experience rather than merely a commodity.
Visitors approach through a narrow stone-paved alley alongside a waterway, passing a small courtyard with a reflecting basin before reaching the entrance. Removing one’s shoes and stepping onto the deep indigo Wilton carpet creates a psychological and sensory transition. Within the compact interior, areas for retail, product display, roasting, and preparation are carefully zoned and clearly distinguished. The central stainless-steel display table was intentionally kept low to maintain openness and visibility. Guests are encouraged to circulate before taking a seat, creating both spatial margin and a sense of order, while the material itself introduces visual coolness and tension into the space.
Positioned before the lattice window where natural light is strongest, a relocated Japanese-made roasting machine releases steam, aroma, and sound into the space each morning. Carbonized cork was selected for the counter finish to conceal the preparation area. Originally intended as a substrate material, the cork released soot and fine particles, requiring extensive experimentation before a custom oil treatment stabilized the surface and produced its deep, saturated tone. The walls and ceiling are coated with paint mixed with binchotan charcoal to absorb light and scent. A large suspended mirror with a custom iron frame serves both practical and symbolic purposes.
Because the traditional wooden structure allowed for a ceiling height of only 2.17 meters, the ceiling was finished with 1 mm mirrored aluminum panels. Inspired by the way water reflects scenery like a mirror, the ceiling was conceived not only to visually expand the space, but also to function as a device that makes time itself visible. Gray mirrored walls dissolve quietly into the background, transforming the interior into a panoramic landscape of people, movement, and passing time.
The project frames the act of purchasing coffee as an experience that begins with crossing a threshold. Materials that evoke the presence of fire, the act of roasting itself, and the shifting reflections of people and time through glass and metal all contribute to the atmosphere. Rather than pursuing trends or spectacle, the design seeks a grounded sensibility shaped by aroma, texture, temperature, and existing conditions already embedded within the site—its architecture, natural light, kissaten culture, and relationship to the surrounding neighborhood.
Through bodily perception, visitors encounter the daily rituals of the kissaten and experience the duration of roasting as a lived moment. The project was conceived not simply as a place to buy coffee or beans, but as a place to engage with the time, labor, and atmosphere behind them. Rooted in Nagoya’s enduring kissaten culture and the memory of local commerce, POPPY Roastery reflects upon the ever-changing present.
