スペイン人オーナーと日本人シェフによる共同経営のTAMESU CORPORATIONより、バレンシア市内に新しい寿司店をオープンしたいと依頼をいただき、プロジェクトはスタートした。
バレンシアにオープンした寿司バー〈KAIDO〉。空間上部にはオリジナルデザインで、木製パネルの光の揺らめきを感じるスクリーンのオブジェがレイアウトされている。店名である〈KAIDO〉は、日本語で「海の道」を意味する日本語で、バレンシアの自然環境ともリンクする名前でもあった。
私たちは、海外ではバレンシアを拠点に活動しており、実際にバレンシアで過ごして感じ取った環境をオブジェに置き換えたいと考えた。バレンシアは1年のうち約300日ほど太陽の日差しを感じられ、その日光が海面に降り注ぎ揺らめくさま、海の中から海面を覗くと海面の揺らめきによって、太陽の光が拡散して無数の光が海中に注ぎ込まれる、そんな情緒的な空間を目指した。
実際に仕上がった空間は、木とバレンシア産の黒いタイルで構成されたミニマルな空間だが、エントランスからカウンター席まで足を運ぶと、上記のコンセプトを表現する木製のオブジェに包まれた空間が現れ、そのコントラストが日差しを表現している。
利用客からは入口からの動線とその先にある客室とのコントラストに反応もよく、料理の質の高さもあり、オープン直後から数カ月先まで常に予約が埋まっている。
木製オブジェは、バレンシアの照明メーカーであるLZFが製造協力をしている。〈KAIDO〉のオーナーのULISESとともにLZFを尋ね、LZFがコンセプトに賛同し、制作を担当した。オブジェのイメージとLZFがプロダクトに用いるオリジナルの木製シートがリンクしたのが協業した理由の1つだ。
その後、LZFはこのオブジェを自社の商品として発表もすることを決定した。名前は「海の道」のコンセプトの通り”SUNS”と命名した。（小林幹也）
A sushi restaurant with the image of sunlight spreading in the sea
The project started when TAMESU CORPORATION, a joint venture between a Spanish owner and a Japanese chef, asked us to open a new sushi bar in Valencia.
The sushi bar〈KAIDO〉opened in Valencia. In the upper part of the space, objects are laid out on a screen with originally designed wooden panels that give the impression of flickering light. The name of the restaurant, “KAIDO,” is Japanese for “sea-way,” a name that is also linked to the natural environment of Valencia.
We also have a base in Valencia, and we wanted to translate the environment that we felt while spending time in Valencia into objects. In Valencia, you can feel the sunshine about 300 days out of the year, and the sunlight falls on the surface of the sea and shimmers. When you look at the ocean’s surface from the inside, the shimmering of the sea surface diffuses the sunlight and pours countless lights into the sea. I aimed to create such an emotional space.
The actual finished space is a minimalist space composed of wood and black Valencian tiles. Still, when you walk from the entrance to the counter seats, you will find a space surrounded by wooden objects that express the above concept, and the contrast between the two expresses the sunlight.
Customers have responded well to the contrast between the line of flow from the entrance and the guest rooms beyond, and due to the high quality of the food, the restaurant is always booked up for several months after its opening.
The wooden objects are produced by LZF, a lighting manufacturer in Valencia. I asked LZF, together with ULISES, the owner of 〈KAIDO〉, and LZF agreed to the concept and took charge of the production. One of the reasons we collaborated was that the image of the object I wanted to create and the original wooden sheets that LZF uses for their products was linked.
Later, LZF decided to release this object as their product. We named it “SUNS,” in line with the concept of sea-way. (Mikiya Kobayashi)
