岩手県盛岡市に本店を構える、肉料理を中心としたレストラン「2983 肉バルサンダー」2号店のプロジェクトである。
矢巾町（やはばちょう）は、東に早池峰山を望み、町内には岩崎川が流れる、自然豊かなところである。店の立地は、JR矢幅駅の前。一帯は住宅が多いが、飲食店は少ない。この地に飲食店の出店を計画したオーナーから、土地探しの段階から相談を受けて関わり、検討に検討を重ね、構想から2年を経て完成した。
肉を炭火で焼くところを客に見せたいというオーナーの要望で、調理場は客席からよく見えるオープンキッチンとし、客席と厨房に一体感が出るようにデザインした。客席からの視界を遮らないように、壁や構造柱の位置を何度も検討している。
夜になると、淡い光の照明と、肉を焼く香りに誘われて、ふらりと立ち寄りたくなる店構え。1人で気軽に酒でも1杯引っ掛けようかという客から、家族連れまで、ワイワイガヤガヤと賑わう楽しげな店内、そんな様子を思い描きながら、インテリアの要素を決めていった。床に埋め込んだピクトサインや、特注のシャンデリア、鏡で埋め尽くしたウォールなど、インテリアの1つ1つに、この店を訪れるたびに、新たな驚きやワクワクを感じてもらいたいという願いを込め、この土地ならではの空間を表現しようと試みた。「矢巾を活性化させたい、矢巾を盛り上げたい」という、オーナーの想いにも応えた店舗になったのではないかと思っている。（鎌田将太）
A restaurant that will become a symbol of the town
This is the second store project of the Meat Baru restaurant “2983 NIQ Bar Thunder”, which has its head office in Morioka City, Iwate Prefecture, and specializes in meat dishes.
Yahaba-cho is a place of rich nature. Hayachine Peak to the east and the Iwasaki River flows through the town. The shop is located in front of the JR Yahaba Station. There are many houses in this area, but not many restaurants. The owner of the restaurant planned to open a restaurant here, and after much deliberation and consideration, the project was completed after two years from its conception.
The owner wanted customers to be able to see the meat being cooked over charcoal, so we designed the kitchen to have an open view from the customer’s seat, creating a sense of unity between the customer’s position and the kitchen. The location of the walls and structural pillars were studied many times to ensure that they would not block the view of the guests.
In the evening, the light lighting and the aroma of grilled meat make you want to stop by. While imagining such a scene, I decided on the elements of the interior. Each element of the interior, such as the pictogram sign embedded in the floor, the custom-made chandelier, and the wall filled with mirrors, is an attempt to express a space that is unique to this region, with the hope that every time you visit the store, you will be surprised and excited by a new experience. I believe that this store responds to the owner’s desire to “revitalize Yahaba and enliven the city.” (Shota Kamada)
