ベトナム・ハノイ市にある〈特撰黒毛和牛専門店 うしのくら〉は、大使館として使用されていたヴィラを高級和牛レストランへと改修した計画である。
既存建物はその用途上、高い塀に囲まれ外部と隔たれており敷地外から中の様子をうかがい知ることは難しいが、いったん敷地内に入ればヴィラの周囲には広々とした屋外空間（主に駐車スペースとして利用）が広がっていることに驚かされる。建物が密集して所狭しと建ち並んでいる雑多でにぎやかな市内と比較すると、中心地においてこれだけゆったりとしたスペースが確保できている物件は珍しい。この広い屋外空間や高い塀を生かせば、ここを訪れた人だけが体験できる特別な空間を演出し、市内の喧騒から隔絶された空間を提供できるのではないかと考えた。
そこでまず駐車スペースとして利用されていた建物周辺部分をすべて庭につくり変えることとした。地面に高低差をつくり、水を流して水辺空間を設け、周囲は芝生を張って緑化し、敷地に入ってから玄関までのアプローチを新たなランドスケープで演出した。ヴィラのかたちはそのまま残して赤い屋根瓦をグレー色に葺き替え、外壁は屋根より若干明るいグレーに塗り替えて建物の印象を刷新した。
1階はホール席とカップル席のカウンター、そして建物の裏をぐるりと回る専用ルートを通って入るVIPルーム、2階はすべて個室とし一部可動間仕切りでつながる部屋を用意している。
全体は黒やグレーを基調として落ち着いた雰囲気とし、赤やゴールドの素材を時折織りまぜ室内がフラットになりすぎないよう配慮した。壁面に使用した黒色に染色した木は、場所ごとでサイズや組み方を変えて貼ることにより、印象が少しずつ異なるよう構成している。
また豆砂利洗い出しや、コンクリート研ぎ出しの床は職人の経験と腕に頼るところが大きく完成するまで緊張を伴うのだが、ベトナムの職人とよく話をして試作を重ね、最終的にはあまり細かいことを要求せず彼らの慣れたやり方に委ねた。仕上がりは程よく手ぐせが残るラフな部分が味わいとなり、それがかえって店内全体の雰囲気を和らげてくれているように感じる。
どの素材も、思わず触れてみたくなるような肌触りのよい仕上げになったと感じている。（川口淳志）
A high-class Japanese beef specialty store that has been renovated to take advantage of the space and special atmosphere of the embassy villa
Located in Hanoi, Vietnam, “Ushinokura” is a former embassy villa converted into a high-class Japanese beef restaurant.
Because of its use, the existing building is surrounded by a high wall that separates it from the outside, making it difficult to see what is going on inside from outside the premises. However, once I entered the site, I was surprised to find a spacious outdoor space (mainly used for parking) around the villa. It is rare to find such a spacious property in the city center, compared to the crowded and bustling city with its many buildings. I thought that if I could use this ample outdoor space and the high walls, I could create a special space that only visitors could experience and provide an area that is isolated from the hustle and bustle of the city.
The first step was to transform the entire area around the building, which had been used as a parking space, into a garden. We created a new landscape for the approach from the entrance to the site by making a height difference in the ground, flooding the area with water, and covering the surrounding area with green grass. The red roof tiles were replaced with gray ones, and the exterior walls were repainted in a slightly lighter gray than the roof to renew the impression of the building.
On the first floor, there are seats in the hall, a counter for couples, and a VIP room that can be entered through a special route that goes around the back of the building, and on the second floor, all the rooms are private, and movable partitions connect some.
The second floor is all private rooms, some of which are connected by movable partitions. The overall atmosphere is based on black and gray, with occasional use of red and gold materials to prevent the room from becoming too flat. The black dyed wood used on the walls is put up in different sizes and different ways to give a slightly different impression.
The exposed gravel and sharpening concrete flooring relied heavily on the experience and skill of the craftsmen, and it was a tense process to complete the work. Still, I talked with the Vietnamese craftsmen and made a number of prototypes, and in the end, I did not demand too many details and left it to their familiar way of doing things. In the end, I did not ask for too many details but left it to the way they were used to doing things. With just the right amount of hand-holding, the roughness of the finished product gave it a particular flavor, which in turn seemed to soften the overall atmosphere of the store.
