〈SOUTH LAB 南方〉は「ラボ」と店名にあるように、広東料理、潮州料理と自家製栽培の野菜、そしてワインを日々組み合わせ研究し提供するレストランの計画である。
そのため、内装は極力壁をつくらず厨房機器と家具を並べるだけとし、これからのお店の進化にあわせて成長できる内装とした。
その飾り気のない空間で、用途が明確になるよう照明計画をした。
野菜を販売するエントランスは、食材を際立たせるために冷蔵庫や陳列棚内の内照照明だけとし、厨房ではその慌ただしさが店頭まで伝わるようひときわ明るい全体照明に、そして客席では卓上の料理が主役となるようペンダント照明を中心とした。
質の異なる3つの空間を隣り合わせることで、都市の一部のような賑わいのある空間を目指している。
スカイツリーの足元、多国籍な人種が集まる街錦糸町で、どこか映画的なディストピア感のある、活気あるお店になることを期待している。（畠中啓祐）
A cohesive restaurant space that shows the characteristics of each space with lighting
“SOUTH LAB Minakata”, as the name implies, is a restaurant where Cantonese and Chaozhou cuisines, homegrown vegetables, and wine are combined and served daily.
For this reason, the interior was designed with as few walls as possible, just kitchen equipment and furniture, to grow as the restaurant evolves.
In this unadorned space, We designed the lighting plan to make the purpose of the space clear.
The entrance, where vegetables are sold, has only internal lighting in the refrigerator and display shelves to make the ingredients stand out, the kitchen has bright general lighting to convey the hustle and bustle to the store, and the seating area has pendant lighting so that the food on the table takes center stage.
The three spaces of different qualities are placed next to each other to create a lively space that feels like a part of the city.
At the foot of the Skytree, in Kinshicho, a town with a multinational population, I hope to create a lively store with a somewhat cinematic dystopian feel. (Keisuke Hatakenaka)
