滋賀県近江八幡にある、創業から100年の歴史ある近江牛を提供する老舗〈毛利志満〉。その一角の鉄板カウンターとラウンジスペースの改修プロジェクトである。
鉄板カウンターの位置を既存のまま使用する、という条件のもと、天井に高低差を設け天井内に既存設備をまとめることで、シンプルな区画に調整し直すことからスタートしている。
歴史ある店舗であるため、既存の建物やその他のスペースとの調和も考え、この地に潜在する和紙、編み物、焼き物の技法を使用することと、名店の肉へのこだわりをそのまま空間の素材に落とし込むことをコンセプトにデザインしている。
「肉を焼く」という、シンプルな調理法でありながら奥が深く、人のワクワク感を掻立てるその行為を「焼く」「温度」「煙」という3つのキーワードに置き換えてマテリアルをセレクトし、ダークカラーをベースに、温度感を感じるブロンズ色、高貴なイメージを想起させる小紫で構成した。
今回は、肉を選んでから調理法を決めるように、まず素材を考えることを最優先に行い、空間構成を考え始めた。
ハタノワタル氏によるムラ感のある和紙、鉄を炭で焼いて着色したタイル、鉄反応で色付けされた木といった、今回のために人の手によって一からつくられた素材を使用した。手仕事により現れる不均一さにより、同一トーンの中に素材の表情が主張をみせ、感覚的なレイヤーを感じるものとなっている。
床面には煙をモチーフにした紫のカーペットを採用し、空間に遊び心を加えている。
窓面の可動パーテーションは、既存の日本建築の雰囲気に合うよう、真田紐の編み方から着想した格子デザインを用い、外と内をほどよく仕切っている。
団体利用に対応するため、家具はすべてオリジナルの可動式としており、椅子は空間に柔らかさを出すために馬蹄形状の脚とし、丸みを帯びた形状としている。（村上智也）
A long-established restaurant that brings out the depth with the technique and expression of the material
Located in Omihachiman, Shiga Prefecture, 〈MORISHIMA〉 is a long-established restaurant serving Omi beef for 100 years. This project is to renovate the teppan (iron plate) counter and lounge space in the restaurant’s corner.
Under the condition that the location of the teppan counter would remain the same, the project started with a simple adjustment of the space by creating a height difference in the ceiling and grouping the existing equipment within the ceiling.
Since the restaurant has a long history, we considered the harmony with the existing building and other spaces. We designed the space based on the concept of using the techniques of Japanese paper, weaving, and pottery latent in this area and incorporating the restaurant’s commitment to meat into the materials of the space.
“The materials were selected based on the three keywords of “grill,” “temperature,” and “smoke,” referring to the simple yet profound act of grilling meat that arouses people’s excitement.
For this project, the priority was to consider the ingredients, choose the meat, and then decide how to cook it before thinking about the spatial composition.
I used materials created by hand for this project, such as Japanese paper with an uneven texture by Wataru Hatano, tiles colored by burning iron with charcoal, and wood colored by the iron reaction. The unevenness created by handwork allows the expression of the materials to assert itself in the same tone, making sense of sensual layering.
A purple carpet with a smoke motif is used for the floor, adding a playful touch to the space.
The movable partitions on the windows use a lattice design inspired by the weaving of Sanada string to fit the atmosphere of the existing Japanese architecture and provide a good separation between the inside and outside.
In order to accommodate group use, all furniture is movable, and the chairs have horseshoe-shaped legs and rounded shapes to create a softer space. (Tomoya Murakami)
