酒蔵のもつ歴史の重厚さと商品と出会う楽しさを表現した直売所

〈笹一酒造 酒遊館〉は、山梨県大月市で360年以上日本酒をつくり続けている老舗酒蔵「笹一酒造」の敷地内にある直売所の内装計画である。

笹一酒造は東京の都心から約1時間、甲府方面からも40分ほどの距離にあり、これまで顧客はバス旅行の団体客が中心であった。今後は個人客もターゲットとし、幅広い層に日本酒の良さを知ってもらえる場所となることを目指し、計画はスタートした。

都心からの距離があるため、リニューアルに伴い非日常的な空間であることや、ゆっくりと長く滞在できる空間が求められた。

笹一酒造は350年以上日本酒をつくり続けている老舗酒蔵であるが、現在では日本酒だけでなくワインやリキュール、焼酎とたくさんの種類のお酒を製造販売している。そのため既存の物販店舗内はやや乱雑にお酒が陳列されていた。

そこで団体客から個人客まで幅広い客層のニーズに合わせた2種類の棚を用意し、まずは商品の陳列を整理することにした。

1つ目は博物館の展示のように、お酒の素材や製法の説明とセットで商品を陳列し、じっくりと商品を吟味することのできる棚を壁面に用意した。壁面の棚は壁と同色の塗装で仕上げ壁と一体化し、お酒のラベルが美しく見えるように複数の間接照明を仕込んでいる。

2つ目は店舗内に島状に点在し発見的に商品との出会いを誘発する棚である。この棚は床と同素材のモルタルで仕上げ、店舗内の風景を形成する一部として扱った。

そしてスケールの大きな店舗に合わせ、バーカウンター(有料試飲コーナー)と一体となった約12mのレジカウンターと、ステンレスを切り出した笹一のロゴのレリーフを設置した高さ6mの巨大な柱を玄昌石で仕上げ店舗の中心に添えた。

カフェの天井はお酒の主原料である稲の藁を編んだ筵(むしろ)を仕上げとした。
筵(むしろ)は酒樽に巻いてある菰(こも)と同じ素材でできており、昔から酒蔵にとって身近な素材である。
カフェでは酒粕など、お酒にちなんだ食材を使用した料理を提供する空間のため、稲の藁を見ることでお米や水田を連想し、食を通してこの場所での体験がより特別なものになることを目指した。

さらに、深く出た軒下空間はエントランスの機能だけでなく、新たにつくり付けのベンチを設け、ソフトクリームを食べるお客さんや周辺の山からの登山客の休憩場所として機能する。

伝統的な酒蔵であることから和の要素も求められたが、安直に和を表現せずにシンプルな素材で酒蔵や日本酒の持つ歴史を感じることのできる重厚感のある空間を目指した。(稲山貴則)

A direct sales office that expresses the profound history of sake breweries and the joy of encountering products

“Sasaichi Sake Brewery, Shuyukan” is an interior design project for a direct sales shop on the premises of the Sasaichi Sake Brewery. This long-established sake brewery has been making sake for over 360 years in Otsuki City, Yamanashi Prefecture.

The Sasaichi Sake Brewery is located approximately one hour from central Tokyo and 40 minutes from Kofu, and until now, its customers have been mainly bus-tour groups. We initiated the plan with the aim of making the brewery a place where a wide range of people can learn about the benefits of Japanese sake, targeting individual customers as well.

Because of the distance from the city center, the renewal project required an extraordinary space and a place where people can stay for a long time and relax.

The Sasaichi Sake Brewery is a long-established sake brewery that has been making sake for more than 350 years and now produces and sells sake and wine, liqueur, shochu, and many other types of alcohol. As a result, the existing store was a bit cluttered with sake products.

The first step was to reorganize the product display by preparing two types of shelves to meet the needs of a wide range of customers, from group customers to individual customers.

The first was to prepare shelves on the wall, like a museum exhibit, where products are displayed along with explanations of the ingredients and manufacturing process of the sake, allowing visitors to examine the products carefully. The shelves are painted in the same color as the walls to integrate them with the walls, and multiple indirect lights are installed to make the sake labels look beautiful.

The second is a series of shelves scattered throughout the store in the form of islands, which encourage visitors to discover new products. These shelves are finished with mortar, the same material as the floor, and are treated as part of the store’s interior scenery.

In keeping with the large scale of the store, a 12-meter cash register counter integrated with a bar counter (fee-based tasting corner) and a huge 6-meter-high pillar with a relief of the Sasakichi logo carved out of stainless steel were finished in Gensho stone and placed in the center of the store.

The ceiling of the café is finished with a straw mat made of woven rice straw, the main ingredient of sake.
The straw mat is made of the same material as the straw mat wrapped around sake barrels, and has long been a familiar material for sake breweries since ancient times.
Since the café is a space that serves food using ingredients associated with sake, such as sake lees, we wanted the rice straw to remind people of rice and rice paddies, and to make the experience of visiting this place more special through food.

The space under the eaves of the roof serves as an entrance and a resting place for customers eating soft ice cream and climbers from the surrounding mountains.

The traditional sake brewery also called for Japanese elements. Still, we aimed to create a dignified space where visitors can feel the history of the sake brewery and sake, using simple materials rather than a simplistic Japanese expression. (Takanori Ineyama)
