ベーグルの可能性を提案する、焼き色をモチーフとした専門店

1998年に東京・自由が丘で誕生したベーグル専門店「ジュノエスクベーグル」。
新たに「ベーグル屋さんの、おいしいベーグル。」をコンセプトに、2019年「JUNO」としてリオープンしたリノベーションプロジェクト。

お店のターゲットはさまざまな年代の女性が中心とはなるが、いわゆる「かわいい店づくり」ではない。
1つひとつ、ていねいにつくり続けてきた伝統の製法を守りつつ、より良い材料を厳選し、日本人の食生活に寄り添ってきた老舗ベーグル店らしい、清潔感のある落ち着いた雰囲気の内外装としている。
サインやペンダント照明、壁仕上げの目地など、あちこちの金物にベーグルの焼き色をモチーフとしたカッパー色を使用。食材の色を引き出したさまざまな色のベーグルがラインナップの中心であることから、そのなかからグリーンやピンクを内装や家具の差し色として取り込んだ。

店内レイアウトは、食事をパッと済ませたい人のための中央の大テーブル席、友人と楽しく過ごせる2~4人席、パパやママがお子さんと安心して過ごせる半個室のブロック席など、さまざまな来店客や時間帯に対応する。

朝食やおやつにとどまらないベーグルの新たな可能性を提案し、いつも主食として選んでいた食パンやごはんの代わりに、毎日ベーグルを食べたくなる店舗を目指した。(寺島敏貴・翠川裕美+関田浩司)

A specialty store that suggests the possibility of bagels with a baked color motif

“JUNOESQUE BAGEL” was established in 1998 in Jiyugaoka, Tokyo, a specialty bagel shop.
This is a renovation project that reopened as JUNO in 2019 with the concept of “delicious bagels at a bagel shop”.

The store targets women of all ages, but it is not designed to be a “cute” store.
The interior and exterior of the shop has a clean and relaxed atmosphere that is typical of a long-established bagel shop that has carefully selected the best ingredients and has been closely tied to the Japanese people’ dietary habits, while maintaining the traditional method of making each bagel carefully.
Signs, pendant lighting, wall joints, and other hardware are all in copper color, a color inspired by the color of bagels being baked. Green and pink were used to bring out the colors of the ingredients in the bagels, which are the core of the lineup, and were used as an accent color for the interior and furniture.

The store layout caters to a variety of customers and times of day, including a large table in the center for those who want to finish a quick meal, seating for two to four people for a fun time with friends, and semi-private box seats for moms and dads to spend time with their children in peace.

The goal is to propose new possibilities for bagels that go beyond breakfast and snacks, and to create a store that makes customers want to eat bagels every day instead of bread and rice, which have always been the staple food of choice. (Toshitaka Terashima, Hiromi Midorikawa + Koji Sekita)
