〈鮨 新波〉は映像制作グループであるNVCが経営する、麹町の本格江戸前寿司店である。店名の由来は、古きよき江戸前の伝統を継承しながら先駆的な寿司を目指すところからきている。
店舗デザインは演劇などの舞台装置からヒントを得た。板前が腕を振るう板場をステージと捉え、明るいヒノキで空間を構成する。対するカウンター席は黒く沈み、客は暗い空間の中で板前のパフォーマンスと寿司に集中できるスペースとしている。その色彩のコントラストが明快な空間をつくると考えた。
カウンターは樹齢400年のヒノキの一枚板で、店内は凛とした瑞々しいよい香りがする。カウンター席の向かいには85インチの8Kモニターを設置し、高精細の美しい映像を借景として楽しむ工夫もある。
また、この店舗には別入口の個室もある。このスペースのデザインは先述のカウンター席とは逆に板場を黒、客席をヒノキで構成し、明るい空間で寿司を楽しめる個室としている。
店舗のアプローチデザインは麹町に多くあった武家屋敷から発想した。築地塀などの意匠を取り入れながら間接照明を設えて壁を浮かし、軽快な表現としたものである。（佐々木 健、稲葉弘恵）
Sushi restaurant emphasizing the contrast of materials
“Sushi SHINPA” is an authentic Edomae (“Edo style”) sushi restaurant in Kojimachi, Tokyo, operated by the NVC video production group. The restaurant’s name stems from the desire to create innovative sushi while maintaining the time-honored traditions of Edomae.
The interior design of Shinpa was inspired by theatrical stage sets. The space is comprised of bright Japanese cypress, with the itaba（work table), where the chef works, positioned as the “stage.” In contrast, the counter seats are subdued in black, providing a vantage point from which customers can concentrate on the performance of the chef and the sushi being made from their lower-lit surroundings. The idea behind this design was to create a clear contrast between the “stage” and the “audience.” The counter is made of a single block of 400-year-old Japanese cypress, bringing a dignified and fresh aroma to the restaurant. Across from the counter seats, there is an 85-inch 8K monitor installed to provide a stunning, high-definition view of the “borrowed scenery” (a traditional concept whereby a background landscape is incorporated into the composition of a garden and so on).
The restaurant also has a private room accessible by a separate entrance. The design of this space is the opposite of the aforementioned counter seating area, with the preparation space in black and the seating encompassed by cypress, creating a private room where customers can enjoy sushi in a bright atmosphere. The design of the restaurant’s exterior approach was inspired by the samurai residences that once existed in Kojimachi, and the walls, incorporating the design of the traditional Tsukiji-style, appear to be floating thanks to the use of indirect lighting, creating a light and airy expression.
