UCHIDA SHANGHAIの庄司光宏が設計を担当した〈上海吉兆〉は、上海の歴史的建築群である上海展覧中心内に位置する寿司店である。本プロジェクトは、江戸前寿司という日本の伝統的な食文化を核としつつ、中国文化の美意識と現代的感性を融合させた空間表現を試みている。
台湾では7年連続ミシュランの星獲得の実績をもつ老舗である。メインとなる10名用の個室には、扇形に造形された彫刻的な天井が、緩やかに弧を描く檜のカウンター上部に配されており、照明により生まれる陰影が空間に象徴的なリズムと緊張感をもたらす。この意匠は、日本の伝統的なモチーフの優雅さを基調としながら、中国的なスケール感や装飾性を内包している。
2つあるプライベートルームは、対照的な空間体験を提供する。1つは和紙テクスチャを用いた柔らかな間接照明が天井に施され、光の層が空間に温かみと触覚的な豊かさを与えている。もう一方は、銀箔仕上げの傾斜天井が、静謐で内省的な環境を構成し、反射光が緊張と静けさを同時に醸し出す設えとなっている。素材選定においても、触感的な豊かさと文化的共鳴が重視されている。中国の伝統色に着想を得た左官仕上げの土壁が空間に深みと温度感を与える一方、手づくりのセラミックタイルや景徳鎮（Jingdezhen）の磁器が、空間と料理を繊細に繋ぐインターフェースとして機能している。
建築的な制約のなかでのデザイン戦略も、本プロジェクトの見どころの1つである。外観の改修が厳しく制限される文化財建築において、建築的アイデンティティの表出を「内部」からアプローチするという設計的挑戦が行われた。さらに、ランダムに穿たれたヴォイドによって、内部と外部、静と動、建築と都市との対話的関係性を意図的に構築している。
全体として、日本の「技」と中国の「雅」が交差する空間は、料理・クラフト・素材・光といった要素をレイヤー的に重ね、時間と文化を横断するような建築的物語を展開する。江戸前鮨が体現する”もてなし”の精神と、現代的なラグジュアリーの再解釈が融合したこの空間は、上海という都市における新たな飲食体験の象徴とも言えるだろう。

A sushi restaurant blending the traditions of Edo-style cuisine with the elegance of Chinese culture
“Shanghai Kitcho”, designed by Mitsuhiro Shoji of UCHIDA SHANGHAI, is a sushi restaurant located within the Shanghai Exhibition Center, a historic architectural complex in Shanghai. This project centers on the traditional Japanese culinary culture of Edomae sushi while seeking a spatial expression that fuses Chinese and contemporary sensibilities.
This long-established restaurant has earned seven consecutive Michelin stars in Taiwan. The main private room, seating ten, features a sculptural ceiling shaped like a fan. Positioned above the gently curved cypress counter, it creates symbolic rhythm and tension through the shadows cast by the lighting. This design embodies the elegance of traditional Japanese motifs while incorporating Chinese-inspired scale and ornamentation.
The two private rooms offer contrasting spatial experiences. One features soft indirect lighting with washi paper textures applied to the ceiling, where layers of light impart warmth and tactile richness to the space. The other employs a sloped ceiling finished with silver foil, creating a serene, introspective environment where reflected light simultaneously evokes tension and tranquility. Material selection prioritizes tactile richness and cultural resonance. Plastered earthen walls, inspired by traditional Chinese colors, lend depth and warmth, while handmade ceramic tiles and Jingdezhen porcelain serve as delicate interfaces connecting the space and cuisine.
The design strategy within architectural constraints is another highlight of this project. For a cultural heritage building with strict limitations on exterior renovations, the design challenge was approached from the “interior” to express architectural identity. Furthermore, randomly punched voids intentionally construct an interactive relationship between the interior and the exterior, stillness and movement, and architecture and the city.
Overall, this space, where Japanese “technique” and Chinese “elegance” intersect, layers elements such as cuisine, craftsmanship, materials, and light, unfolding an architectural narrative that transcends time and culture. Blending the spirit of hospitality embodied by Edomae sushi with a reinterpretation of modern luxury, this space stands as a symbol of a new dining experience in Shanghai.
