鹿児島県鹿屋市にある既存飲食店舗の改修プロジェクト。コロナ禍による業態変更に伴うリニューアルであり、クライアントのもつ飲食部門リソースを集約し、再構成した店舗である。
クライアントは畜産飼料の販売を行う鹿児島県鹿屋市の寿商会である。販売先の農家から自分たちの飼料を食べて育った家畜を精肉・チーズ・ジェラートなどの原材料として買い戻すかたちで仕入れ、畜産農家との間での循環をつくり出している。
また、同社は飼料から生産、加工、消費までを流れをもった「食のストーリー」として提案しており、このレストラン、カフェは販売した飼料がお客さんのところに行き着く最終地点となる。
既存店からの地元ファンを引き継ぎ、リニューアル後は地元以外からも新たなファンを獲得すること。ここでは「食のストーリー」を可視化するため、既存店よりオープンになった厨房内の生産、加工風景を、ライブ感も含めて楽しんでもらえるような大きな吹き抜けをつくった。吹き抜けによって2階や螺旋階段からも厨房が見えるようになり、焼きたてパンの香りまで楽しめるようになった。
クライアントの保有するチーズファクトリーやホテルが隣接してあり、これまでバラバラな計画として建てられていたが、エントランス位置を変えることで人の流れが変わり、ひとまとまりのエリアとその動線計画が新たに生まれた。
また外部からの動線の延長で店内カウンターに並ぶパンやチーズ、デリ、ドリンクなどさまざまな商品に対し、決済や動線を捌きつつ、螺旋階段をぐるぐると上って2階の飲食スペースにスムーズに流れる動線とすることとした。動線を可視化するためのデザインとして大きな吹き抜けに挿入された曲線、曲面が全体を柔らかく包むような空間となった。
既存の構造体をできるだけ再利用しつつ大きな吹き抜けをつくったり、屋根のトップライトから1階にダイレクトにそのまま採光を取り入れたりするように床に開口をつくることで、垂直的方向への意識を伴った空間とすることができた。
新規に入れ替えた構造体はシルバーに塗装し、構造的視点でも新旧の対比を明確にした。また吹き抜けに残った既存梁を照明レールの受け材と12面体スピーカーの設置場所として再利用した。
平面的な、ぐるぐると回る人の動線に対し、垂直的な光の動線といえる2つの要素を骨格としてもった明快かつ複雑に絡み合う空間になっている。（田中裕之、花塚紘紀、服部あやの、藤城太一）
Bakery cafe for a feed company that visualizes the story of its ingredients
This is a project to improve an existing restaurant in Kanoya City, Kagoshima Prefecture.
It is a renovation that accompanies the changes in business conditions due to the pandemic and a shop that is reconfigured by concentrating the resources the client holds in the food and drink division.
The aim is to take over local fans of the existing store while acquiring new non-local fans post-renovation.
To visualize the “story of food” here, we created a large atrium for customers to enjoy the live experience of watching production and manufacture within the kitchen that is now more open than it was previously. Because of the atrium, customers will now be able to see the kitchen from the second floor and spiral staircase, as well as enjoy the wafting scent of freshly baked bread.
The cheese factory and hotel owned by the client are adjoining. These were previously built separately, but by changing the location of the entrance, the flow of people has changed, giving birth to a congregated area and a new flow plan.
Additionally, by extending the line of flow from the exterior, we were able to create a smooth line of flow, allowing for customers to settle payments for the bread, cheeses, delicatessen, and drinks lining the shop window and then climb up the spiral staircase to the eat-in space on the second floor.
The curve inserted into the design to visualize the flow manifests an interior where a curved surface gently envelops the whole area.
Trying to use as much of the existing construction as possible, we added a large atrium, as well as created an aperture in the floor so that the top light on the ceiling could directly shine on the first floor. Through this, we were able to create a space imbued with vertical awareness.
We painted the new constructions silver to make the contrast between old and new structurally apparent. Furthermore, we reused the pre-existing beams, which remained after the atrium was added, to house the lighting rail and 12-sided speakers.
It is a space that intertwines the two components of flow, the spiral flow of people on a planar level with the vertical flow of light, as its skeletal structure in a defined yet intricate way. (Hiroyuki Tanaka, Hiroki Hanazuka, Ayano Hattori, Taichi Fujishiro)
